ABSTRACT The Peruvian carrot is a root that is rich in bioactive compounds. However, owing to the short shelf life of these carrots, their consumption is restricted. In the present study, we investigated the microwave vacuum drying (MWVD) of restructured Peruvian carrot chips. Two microwave power levels, namely, constant and two-stage, were considered and evaluated to determine their relationship with drying time, kinetic parameters, energy consumption, and preservation of carotenoids and phenolic compounds. At the constant microwave power level, drying time decreased with increasing drying rate, sample temperature, and energy consumption. However, it did not affect the drying rate at the end of the drying. At the two-stage microwave power level, the drying time was similar to that observed in constant power level experiments. However, sample temperature and energy consumption were decreased when drying at a lower power level. Nutritional compounds were better preserved by using the highest tested power level at the two-stage level and the lowest tested one at the one-stage power level. Page’s and Fick’s models presented an excellent fit of the experimental data. Using the two-stage microwave power level at a higher initial power level (MWVD-5-1) saved energy, decreased the drying duration, and preserved the bioactive molecules in restructured chips.

RESUMO A mandioquinha-salsa é um caule subterrâneo rico em compostos bioativos. Devido ao seu reduzido prazo de validade, seu consumo se torna restrito. A secagem micro-ondas-vácuo (MWVD) de chips reestruturados de mandioquinha-salsa foi estudada. Foram utilizados diferentes níveis de potência de micro-ondas (constante e em duplo estágio), e seus efeitos avaliados com relação ao tempo de secagem, parâmetros cinéticos, consumo energético e conservação de carotenóides e compostos fenólicos. Há um nível de potência de micro-ondas constante, o nível de potência reduziu o tempo de secagem, com aumento da taxa de secagem, da temperatura da amostra e do consumo energético. No entanto, o nível de potência do micro-ondas não influenciou na taxa de secagem ao final do processo. Durante tratamentos de nível de potência em dois estágios, o tempo de secagem foi semelhante ao observado em experimentos de nível de potência constante. Ainda assim, a temperatura da amostra e o consumo de energia foram reduzidos durante a secagem a um nível de energia menor. Melhor conservação dos compostos bioativos foi proporcionada em duas situações: por dois estágios com a maior potência testada e por uma etapa com a menor potência testada. Os modelos de Page e Fick apresentaram excelentes ajustes aos dados experimentais. A utilização de dois estágios em um nível de potência inicial mais alto (MWVD-5-1) economizou energia, reduziu a duração da secagem e preservou moléculas bioativas dos chips reestruturados.

RESUMO Vegetais não convencionais são aqueles que apresentam distribuição limitada, restrita a determinadas regiões. Como resultado da globalização e da industrialização de alimentos, seu cultivo e consumo foram reduzidos. A taioba [Xanthosoma sagittifolium (L.) Schott] é um exemplo desta categoria de vegetais. O processo de secagem aumenta a estabilidade do alimento, mas pode alterar negativamente o valor nutricional e a qualidade final do produto. O pré-tratamento com etanol reduz o tempo de secagem e pode auxiliar na preservação das características nutricionais. O objetivo deste trabalho foi avaliar o efeito da secagem a vácuo e do pré-tratamento com etanol na cinética de secagem, modelagem matemática e qualidade final de folhas de taioba. Maior temperatura e uso de etanol proporcionaram menor tempo de secagem. Equações empíricas foram empregadas para avaliação do comportamento da secagem, das quais as equações Logarítmica e Midilli & Kuçuk apresentaram melhores desempenhos. Foi observada diferença significativa (p ≤ 0,05) no teor de ácido ascórbico, atividade antioxidante e compostos fenólicos totais nos diferentes tratamentos. Houve preservação do teor de ácido ascórbico nos tratamentos em que o etanol foi aplicado. Menores teores de compostos fenólicos totais e atividade antioxidante foram observados quando o etanol foi empregado. Não houve diferença significativa (p > 0,05) nos valores de pH e acidez titulável.

ABSTRACT Non-conventional vegetables are those with limited distribution, restricted to certain regions. As a globalization and food industrialization result, its cultivation and consumption has decreased. The taioba [Xanthosoma sagittifolium (L.) Schott] is an example of this vegetable category. The drying process increases the food stability, but it can negatively alter the nutritional value and the final quality of the product. Ethanol pretreatment reduces the drying time and can assist in the preservation of the nutritional characteristics. The aim of this work was to evaluate the effect of vacuum drying and ethanol pretreatment on the drying behavior, mathematical modeling, and final quality of taioba leaves. Higher temperatures and ethanol pretreatment lead to a shorter drying time. Thin-layer equations were evaluated for their ability to predict the drying kinetics, of which the Logarithmic and Midilli & Kuçuk equations performed best. A significant difference (p ≤ 0.05) was observed in the ascorbic acid content, antioxidant activity and total phenolic compounds in the different treatments. There was preservation in ascorbic acid content in treatments in which ethanol was applied; moreover, lower total phenolic compounds and antioxidant activity were observed when ethanol was used. There was no significant difference (p > 0.05) in pH values and titratable acidity.

Abstract Osmotic dehydration (OD) is a method to partially reduce moisture of food, aiming to improve the shelf life and the stability of the products. The mass transfer that occurs during this process can be enhanced with the application of reduced pressure in the first minutes of the osmotic dehydration (pulsed vacuum osmotic dehydration - PVOD). The present work aimed to study the vacuum effect on the kinetics of osmotic dehydration of vegetables (carrot, eggplant and beetroot) in terms of water loss, solids gain and water activity, in ternary solution. Moreover, mathematical modeling of experimental data obtained from the osmotic processes, was employed for correlating the mass transfer of the food product under the different conditions. An intensification of mass transfer was observed for carrot and eggplant in the vacuum treatments. This was related to their porous structure. The present work demonstrated a lack of fit of Fick’s second law for describing the dehydration kinetics of the eggplant.

RESUMO Massas alimentícias apresentam boa aceitação em todo o mundo, principalmente devido à sua versatilidade, baixo preço e facilidade de preparo, porém, não são nutricionalmente equilibradas fornecendo basicamente carboidratos. Assim sendo, o uso de ingredientes alternativos que reduzam as essas deficiências nutricionais, sem afetar, no entanto, suas características tecnológicas e sensoriais. Este trabalho avaliou o efeito da utilização de semolina de trigo e pericarpo micronizado de milho (PMM) na composição físico -química, qualidade de cozimento e cor de massas tipo espaguete. Espaguete foi produzido utilizando farinha de trigo, com a incorporação de pericarpo de milho, nas concentrações de 0, 10, 20 e 30%. Não foram observadas diferenças no conteúdo de umidade e lipídios, tempo de cozimento, ganho de peso e aumento de volume (p > 0,05). Foi possível observar que a suplementação com pericarpo micronizado de milho apresentou diferença significativa no conteúdo de proteínas, minerais, fibras alimentares e perda de sólidos solúveis dos espaguetes (p < 0,05). Com o aumento da concentração de pericarpo micronizado de milho, a diferença de cor foi acentuada. A utilização de PMM mostrou-se viável, apresentando um produto enriquecido nutricionalmente sem maiores comprometimentos à qualidade final das massas.

ABSTRACT Pastas are generally accepted all over the world, mainly because they are versatile, cheap and easy-to-prepare. They are not nutritionally balanced, since they provide mainly carbohydrates. As a result of this, it is important to use ingredients which could improve the nutritional deficiencies, without affecting the technological and sensorial characteristics. This study evaluated the effect of using wheat semolina and micronized corn pericarp (MCP), on the proximate composition, cooking quality and color of spaghetti type pasta. Spaghetti pasta was produced using wheat semolina with the incorporation of micronized corn pericarp, at levels of 0, 10, 20 and 30%. There were no significant differences (p > 0.05) between the formulated samples with regards to the contents of moisture and lipid, cooking time, weight gain and volume increase. As observed, supplementation with micronized corn pericarp presented significant difference on the contents of proteins, minerals, dietary fiber and solid soluble loss of the spaghetti pasta (p < 0.05). With increase in micronized corn pericarp concentration, the color difference became accentuated. The use of MCP appears to be viable, providing a nutritionally enriched product without further impairment on pasta quality.
